Chickpea (or Cicer arietinum) is an excellent ingredient in food additives. It may be known as the main ingredient in hummus. It is a plant extremely rich in protein – in 100 g of dried chickpeas, there is up to 20.47 g of protein. Chickpeas have a low glycemic index (IG 30) and are recommended in low-sugar diets. It is also a source of exogenous amino acids. These are amino acids essential for the proper functioning of the human body and people are not able to generate them on their own, which is why they should be supplemented with a proper diet.
Thanks to their properties, chickpeas are an excellent meat substitute and are one of the most popular food ingredients for vegetarians and vegans.
