Acid chains cut by enzymatic treatment on nucleotides, such as IMP and GMP. Yeasts are processed using modern autolysis, hydrolysis and separation, and then spray dried. Xelist™ UM122 enhances the taste of food, relieves salty and sour taste. Helps to reduce the level of salt in the finished product. It has a strong Umami taste.
